Easter is a great time to get yourself and the kids into the kitchen to do some family baking. This recipe is really easy to make and tastes delicious. We’ve used mini eggs to flavour and decorate, but you can add any of your favourite chocolates. We have also served this cake warm with ice cream for a nice simple Easter dessert.

Prep time 15 minutes
Bake time 35 minutes
255g caster sugar
255g margarine or soften butter if you prefer
170g plain flour
170g self raising flour
30g cocoa powder
1 beaten egg
2x 80g bags mini eggs
Preheat your oven to 170c
In a mixer or with a bowl and wooden spoon, beat together the sugar and margarine until pale and fluffy
Add the egg into the mixture and combine together.
Sieve and mix in the two flours and the cocoa powder until all the ingredients are fully incorporated and you have a stiff, cookie dough like mixture
Spread the mixture into a non stick or greased and lined square tin
Push the mini eggs into the dough so that you can just see the top of the mini eggs and they are level with the top of the mixture.
Bake in the oven for 35-40 minutes or until firm
Sprinkle with sugar or drizzle some melted chocolate over the top while still warm.
